Mashed Potato Casserole

Potluck Saturday

You'd better make two pans of this one if you take it to a potluck... it goes FAST! It is a huge hit with kids and teenagers, and is great if you need a dish to make up in advance. My mom, who gave me the recipe, likes to serve this one for holidays so she doesn't have to make mashed potatoes last minute.

Mashed Potato Casserole
  • 12 medium potatoes, cubed and boiled with a diced onion
Mash with:
  • 1 brick of cream cheese
  • 1 c. sour cream
  • 4 tsp. salt
  • 1/2 tsp. each of garlic powder, dried parsley and paprika
Spread in a 9x13 pan and top with 2 c. cheddar cheese.

Bake at 400* for 35 minutes.

    Just rediscovered your blob. I was having serious withdrawal and glad we are now catching up and reading past posts. Making vast preparations for "company" well not that vast, but lots of past due cleaning. Set a insect bomb in the shack. I cannot go near my finned friends now till I scrub. G.B. sold her step stool you used to use in a garage sale. But I found another for 20 bucks and it is immaculate. Hope the "boot sale" is going well. Love ya.

  2. THANK YOU! First, i love that the person above said "blob" :) Second, I am having a family with four children for lunch on Sunday and wanted to do mashed potatoes, but didn't have the time.. now I have the perfect dish!
